These are some awesome recipes. We always end up making French Toast as you have on the list but we are definitely going to need to branch out and try some new recipes.

That French Toast is just so good!

The recipes look great! We’re usually out for an 8-10 day canoe trip and don’t carry cast iron or cans/bottles. Our challenge is 2 vegetarians and a lactose/gluten intolerant individual. With some modifications, these look doable. We’ll give them a try and report back.

Camping season is here, which means it’s the perfect time to start planning your camping breakfasts and meals.

My family camps a couple of times a year. Usually it’s for our yearly mother-daughter camping trip. I like relaxed mornings around the campfire, with a good cup of camp coffee and an easy camping breakfast that doesn’t take hours, or require a lot of prep & cleanup.

We’ve gathered our favourite fun & easy camping breakfast ideas all ages will love, plus some tips for making breakfast easy peasy.

EASY CAMPING BREAKFAST RECIPES

Breakfasts while camping don’t have to be complicated, especially if you prep some meals & ingredients ahead of time. As well as have some no-cook options on hand for when you want an extra lazy morning.

Some quick camping breakfast tips to enjoy the most important meal of the day:

  • Use store bought pancake batter, you only have to add water to or prep the batter ahead of time in a sealed container (keeps about 2 days in the cooler)
  • Buy pre-sliced deli meat & cheese & already cut up fruit
  • Use instant drink packages (coffee, hot chocolate, tea etc.)
  • A bodem or pour over with a coffee filter are easy ways to make coffee
  • Bring shelf stable milk  if you don’t like milk powder  

1. Tasty Breakfast Sandwich

A tasty breakfast sandwich with an English Muffin, and our favourite toppings is our go-to for mornings. Easy recipe to cook over the coals of a campfire on your next camping trip.

You’ll need:

  • English Muffins – enough for everyone to have 1 or 2
  • Cheddar Cheese or your favourite pre-cut cheese slices – 1 for every sandwich
  • Salami / Ham / or favourite deli meat slices
  • Fried or Scrambled Egg – one for each sandwich (optional – we skip for a quick mess free option)
  • Tomato slices (optional)

Fry or scramble the eggs first. Lay a piece of tinfoil down on the table, large enough to wrap up the sandwich completely.

Place 1 slice of cheese, meat & tomato on one side of sandwich, close it up & wrap in tinfoil. Cook about 10-15 minutes over coals to melt the cheese & heat everything up. Rotate and flip the tinfoil package to prevent burning.

When it’s done, quickly fry up the egg and place inside finished sandwich.

2. Skillet Breakfast with Potatoes & Peppers

Thick, dunkable French toast sticks are the ultimate in kid friendly camping breakfasts, that adults love too.

Ready in about 20 minutes, your hungry hoards can grab and go before the hangries set in. Make sure to use real maple syrup & add berries or other fresh fruit for a sweet treat.

4. Bacon On A Stick

  • Protein bars, granola bars or breakfast bars
  • Fruit Salad & Yogurt
  • Yogurt cups & granola
  • Apples & peanut butter (add to a tortilla wrap or not)
  • Bagels with cream cheese (add lox for the adults)
  • Tuna Packets with crackers
  • Avocado / guacamole on pita, or Ryvita crackers
  • Kids fruit pouches & fruit smothie pouches
  • Canned chili or soup

The most important meal of the day is equally as important (if not more important) when you’re camping. Breakfast can be as simple as dry cereal or a granola bar, but where’s the fun in that? Granted, when you have small kids who need food right away, these are essentials, so don’t forget to pack them!

Once you have tamed the hangry littles with some initial food, where do you start with breakfast when you’re not only away from home in the great outdoors and without the modern conveniences of your own kitchen?

I have some tips for making breakfast a breeze while camping plus some fantastic recipes to try on your next camping trip!

Top 5 Favourite Easy Camping Breakfast Ideas:

1. Oatmeal – whichever is your favourite: overnight oats, instant oatmeal packs, or cook up a pot over the fire.  Top it off with fresh fruit, yum!

2. Yogurt – chop up some fresh fruit, add yogurt and sprinkle granola or chia seeds on top (canned fruit works well too)

3. French Toast – Crack a few eggs, a generous pour of milk, many many shakes of cinnamon, dunk in the bread and grill until crisp.  Don’t forget the Maple Syrup!

4. English Muffins – Throw them into the cast iron skillet if you want them toasty and ready for cream cheese, or bring along some peanut butter and jam!

5. Eggs – However you like them: Scrambled eggs, a make-ahead breakfast sandwich, fried with toast and bacon, a cheddar cheese breakfast burrito, or the easy way – just hard boil them at home!

Prep, prep, prep! Whatever can be mixed or chopped before you leave the ease of your home kitchen, take the time and do it. Future you will thank you.

1. Pre-cook the Bacon

Frying bacon ahead of time is a game-changer! Get that whole package done and all you’ll have to do is heat it a bit at the campsite and it’s done! I recommend saving all the bacon grease in a glass jar and bringing it along on your camping trip. You’ll want a little in the frying pan to reheat the bacon and it is awesome for making scrambled eggs.

I think these days you can also buy pre-cooked bacon in the freezer section. My grandma likes this, but I haven’t tried it yet.

2. Scramble your eggs

While cooking the eggs might not take a long time, cracking eggs does! Find containers that will hold as many eggs as you need each morning and go ahead and whisk those bad boys. Store the egg mixture in the cooler for up to a couple of days.

Or, if you have any food safety concerns about scrambling the eggs ahead of time, you can purchase cartons of egg whites and these are perfect for scrambled eggs and easy to use… or powdered eggs is an option too!

3. Pancake Batter Shortcuts

I recommend using “just add water” pancake mix while you’re camping. If you have a water bottle that has measurements on the side, add the water in, measure out the dry ingredients, give it a shake, and your pancake mixture is ready!

If you want to fancy up your pancakes, bring along some berries to add in, mash up a banana or two into the batter, or add some cinnamon and raisins (or chocolate chips!) to the dry mix before leaving home.

4. Hot Beverages: Skip the fancy, try instant

Just because you’re camping doesn’t mean you have to slack on morning drink options! If you have a camp stove, you can heat water for anything from coffee to tea to hot chocolate.

Want to simplify your morning? Go instant! Spend some time browsing the coffee aisle. There are so many gourmet varieties of instant coffee these days. So much easier than cleaning a coffee machine at the campground.

Another easy tip: If you have access to electricity, bring along an electric tea kettle and an extension cord! Coffee can be made in a percolator, French press, or if you brought the extension cord, why not just bring a coffee maker? The space different items take up is all about priorities.

5. Powdered Milk?

If your kids like milk (but maybe don’t like powdered milk), there are a few shelf-safe milk options that don’t need to be chilled until you’re planning to drink it. Bring along the individual containers and throw what you’ll need for the next day into the cooler the night before. They will be nice and cold when you need them, but won’t take up tons of space in your cooler!

Powdered milk is an option for cereal and if your family likes alternative milks like soy and almond, you should be able to find non-refrigerated options of these as well.

6. Plan and Prep before the trip!

Yes, it takes a bit of extra time, but do it!

Make a meal plan, even if it’s a general outline… then, prepare everything you can ahead of time.

Cut up the pepper you plan to add to your scrambled eggs. Wash the berries. Mix up your overnight oats into individual jars before the trip. Anything that can be done at home means one less thing you need to do when you’re out enjoying the quite, relaxing wilderness.

The Simple Breakfast: Oatmeal, Cereal, and Fruit

Easy breakfasts are a must for some camping mornings. Especially when you need a breakfast to be quick so you can get out and explore!

Cereal : Bring along your preferred milk option (don’t forget about powdered)

Oatmeal: Instant, over-night, old-fashioned (add in some raisins, nuts, and seeds too)

Fruit: Fresh or from the can

Yogurt: Pair this with fruit, some granola, and you’ve got a yummy healthy simple breakfast!

It doesn’t get much more simple than cereal . Powdered milk is my go-to for a cereal morning. If you plan ahead, though, oatmeal can be a quick breakfast, too!

Instant oatmeal packets only require boiling water, which is easy! And Overnight oats can be prepped ahead of time and put into a mason jar to pull out as needed. Use those lids and don’t worry about washing until you get home.  These two options are our go-to when we’re planning early mornings or looking for something quick and on the healthier side.

Berry Overnight Oats – A delicious and healthy option that will only take about five minutes to prep!

Doughnuts and pastries:  If you’re camping close to a town and it’s easy to pop into a café, grabbing some freshly made sweets can be such a special treat!

French Toast and Pancakes:  Easy to mix up the dry ingredients before hand and mix the wet ingredients that morning

PopTarts and Toaster Strudels: Yes, a bit low on the nutritious scale, but fun for kids to roast these over the fire!

French Toast Foil Packet – You could always bring a huge electric skillet camping and make French toast in bulk, but this recipe takes up less space and is super fun to make! Packed with lots of topping ideas, these French Toast Foil Packets are sure to be a hit.

I love make-ahead meals! And camping make-ahead meals are no exception. Breads and muffins are a perfect and easy camping breakfast option! Simply make a batch of muffins ahead of time and freeze them to keep other foods cold in the cooler for a day or two while they thaw.

Go ahead and make a batch of your family’s favourite muffin recipe or try something new!

Muffins: So many to choose from! Our favourites are banana chocolate chip, blueberry with brown sugar on top and morning glory muffins – full of all sorts of great things!

Cinnamon raisin bread: toasted with butter, so good!

Fruit Loaves: Zucchini, banana, cranberry, pumpkin, etc.

Toast: So simple! Peanut butter, jam, honey, easy!

Vegan Blueberry Lemon Muffins – Two fruit flavors that are a wonderful mix have to be blueberry and lemon! Try making and freezing these muffins for a fast and tasty camping breakfast.

If you’d prefer to make your bread right over the campfire, give this one a try!

Damper – A traditional Australian bread that is easy to make at the campsite, try a Damper and learn some history while you’re at it!

Hearty Breakfast Ideas

Feeling a little more ambitious? These hearty hot breakfasts may take a smidge more time if you’re making them on-site, but they will be well worth your time and effort.

Basic Bacon and Eggs: A traditional hearty breakfast without much work (if you pre-cook the bacon at home!)

Campfire Frittata: Grab your cast iron skillet, some eggs, cubed ham, chopped onion and bell peppers, spinach, and your favourite cheese. Drizzle some olive oil to sauté the onion and peppers first, then mix everything together and cook over the open flame.

Breakfast Burger, Burrito, or Sandwich: Whatever you call it, the basic recipe is the same – Bread, buns, or flour tortillas with scrambled or fried egg, bacon, sausage, or ham, and cheese inside.  Always yummy!

Biscuits and Gravy Breakfast Skillet – An all-in-one pan delight that will fill hungry bellies for hours!

Campfire Egg Cups with Ham – An easy recipe to customize and so simple to make (even the kids can help!). Use an aluminum muffin tin to cook these over an open fire.  Oh, and they’re great for supper too!

Broccoli Egg Bites – Tasty whether eaten hot or cold, broccoli egg bites are a make-ahead, savory snack that will give you a boost of nutrients, too!

Make-Ahead Scrambled Egg Muffins – Another make-ahead breakfast idea, these egg muffins are easily customized to your taste. You can even make different flavors all at once to add lots of variety!

Healthy Vegetarian Greek Breakfast Egg Muffins – Here’s a scrumptious Greek version of egg muffins that is sure to add some flavor to your morning.

Bacon or Sausage, Eggs, and Toast – A simple made on-site breakfast, even this one can be simplified. As I mentioned before, you can crack your eggs and put them in a water bottle for easy scrambling, the bacon and sausage can be cookied ahead and reheated in a skillet (save that grease!), and toast can be made on the camp stove or over the campfire.

Backpacking Breakfast – Cheesy Bacon Grits. Yummy. An excellent choice for on-the-go hikers and campers!

Tailgate Breakfast Tacos – Easily adapted for the campsite, slice your peppers and crack your eggs before you leave home and this breakfast will come together quickly.

Skillet Breakfast – I recommend some prep with this one to cut down on the time, but with a nice, hot fire, this one-pot breakfast will come together quickly. Eggs, peppers, potatoes, and bacon are such a tasty combination!

Huevos Rancheros with Chorizo – A colorful and protein-packed breakfast that will be a perfect taste excursion from your everyday breakfast items!

Mountain Man Breakfast – A filling option consisting of eggs, ground sausage, potatoes (regular, sweet, or hash browns all work), and cheese, a Mountain Man Breakfast will fill you up, but will take some time to cook, so be prepared.

Breakfast in a Bag – A fun idea that doesn’t use any dishes (bonus!). Breakfast in a Bag is delicious and a simple bacon, eggs, and cheese meal that cooks over hot coals in a paper bag!

Campfire Breakfast Burritos – Breakfast Burritos can be made ahead completely, wrapped up in foil, and reheated over a campfire. You can also scramble the eggs ahead of time and toss them in a plastic bag for the cooler to use as-needed.

Camp Kitchen Considerations and FAQs

If you’re in an RV, you don’t have to worry about a stove and refrigeration (probably). For those of us who love (or are willing to endure) a hardier form of camping, let’s think through the kitchen situation.

No Refrigeration?

My first suggestion is to be sure to invest in an excellent cooler. Read those reviews and find one that stays cool for a long time. Also, I recommend finding one that has a spigot on the bottom so you can easily drain the water that accumulates from melting ice (and for easier cleaning). Check that cooler often and make sure everything is staying nice and cold! If you want to be extremely precise, invest in a thermometer so you can monitor those temps.

The second recommendation is to find alternatives to having to use a cooler. Especially for items that would be a huge issue if they spoiled or would take up a lot of space in a cooler.

I’m talking powdered items that come to life with a little water, for example, Powdered Milk – If mixed correctly, your kids can’t tell that you’re using powdered milk instead of fresh milk in the cereal. Just be aware, once reconstituted, the milk has to be refrigerated. So be sure to make just what you need or you’ll be cooling it anyway. But you can definitely store it in smaller glass containers and it will take up less space in the cooler, so it is still a great alternative!

How will you cook breakfast?

The next challenge is the cooking. It’s likely that you are cooking over an open fire, on a camp stove, or on a single butane burner (because, remember, if you have the luxury of all amenities in an RV, you’re skipping this section).

A campfire will allow everyone to cook their own food as they like it. Pop some toast in a toaster basket and throw it over the flame for a few minutes and it’s done. Easy peasy. There are also lots of foil-wrapped meals that can be cooked in the hot coals.

The downside to a campfire is that the heat can be inconsistent and if your wood is wet, you are out of luck. Keeping a fire going can be a challenge, so make sure you’re up for it! And, in the morning, some campers don’t enjoy waiting the time needed to get the fire going properly for cooking.

A camp stove is a great way to have more consistent cooking capabilities. With two burners, you can heat more than one thing at once, which will make a meal take shape much quicker. It also has a natural enclosure which will help keep wind from killing the flame.

The downside to a camp stove is that they tend to be rather large and cumbersome plus they require fuel which you will have to purchase separately. While they are safer in terms of starting fires in the wilderness, they aren’t nearly as cozy and nostalgic as drinking your coffee by the campfire. 

A single butane burner will be lighter in weight, for sure, but be sure to purchase a wind screen, too. Nothing kills breakfast quicker than a burner that won’t stay lit.

What are some no cook camping breakfast meal ideas?

As mentioned above, cereal, granola, yogurt, fruit (fresh and dried), and bagels with peanut butter are great options.

What breakfast ideas have more protein?

Eggs, Greek yogurt, hard cheese, meats, and some milk powders will have a full serving of protein. You can also increase the protein content of breakfast by adding seeds and nuts to the top of your toast, yogurt, oatmeal.

What is a good breakfast protein beside eggs?

Here are some ways and examples of high protein breakfast food ideas:

  • Find heartier breads with a higher protein count (look at whole grains and sprouted wheat options), then spread them with nut butters and a sprinkling of seeds and nuts on top
  • Greek yogurt (check the protein content), top it with seeds and nuts (chia, pumpkin, almond, shredded coconut, etc.)
  • Sprinkle granola, extra seeds and nuts on top of your chopped fresh fruit
  • Add a few slices of hard cheese to your breakfast
  • Make ahead sandwiches or wraps with cooked turkey or chicken, cheese, and avocado
  • Cook up some breakfast meats: bacon, sausage, ham
  • Have a few pieces of beef jerky with your morning meal
  • Prepare a batch of your favourite protein balls
  • Bring along some granola bars higher in protein. Clif bars (chocolate chip or fudge) are our favourite !

This is a classic breakfast no matter where you are! When camping, all you need to do is scramble some eggs in a pan, toast some bread, and you have a complete meal. I like to saute veggies like spinach, peppers, onion, and mushrooms to add to the eggs, along with some cheese. Bacon is another great addition to this meal. To make things easier, you can cook the bacon ahead of time at home and then chop it up and mix it in with the eggs at camp.

This really is the ultimate breakfast sandwich – fried egg, melted cheddar cheese, bacon, green onions … what could be better? This meal can be made with one pan!

Cereal is a great no-cook camping breakfast idea

This is the perfect no-cook camping breakfast. Simply pack your favorite cereal in your pantry food bin and some milk in the cooler. All you have to do at camp is find a bowl to eat out of.

When Nick and I first started dating, the breakfast burrito was the first thing he ever cooked for me while camping. We once spent an entire week camping in the desert making breakfast burritos every single day and it was awesome! These burritos have all the classics such as eggs, cheese, and hot sauce, but they also have some extras like kale and avocado which really take these burritos to the next level.

Dinner has never been easier with these foil packs — simple wrap and bake. So easy! And the leftovers are even wonderful the next day!

Ingredients

  • 4 boneless, skinless chicken breasts
  • Kosher salt and freshly ground black pepper, to taste
  • 1 cup pesto, homemade or store-bought
  • 2 Roma tomatoes, sliced
  • 4 ounces fresh mozzarella cheese, cut into 4 slices
  • 1/4 cup basil leaves, chiffonade

Instructions

  • Preheat the oven to 375°F.
  • Cut four 12-inch-long sheets of foil. Season the chicken in the center of each foil with salt and pepper to taste.
  • Each foil packet should be folded on all four sides. Serve the chicken with pesto, tomatoes, and mozzarella on top.
  • Fold the sides of the foil over the chicken, thoroughly enclosing it and sealing the packets shut.
  • Place the foil packets on a baking sheet in a single layer. Bake for 25-30 minutes, or until the chicken is completely cooked through and has reached an internal temperature of 165 degrees F.
  • Immediately serve, garnished with basil if desired.

Maybe it’s just me, but I’m convinced that most food tastes better when eaten outdoors.  Breakfast has always been my favorite meal, and camping is no exception.  If there’s one family camping meal that I want to make sure that we eat something AWESOME, it’s a good camping breakfast.

All of these camping breakfast ideas, are great whether you’re camping solo, or cooking for a large group camping trip. Above all, all of these ideas below are kid-friendly camping breakfasts!

When we’re out camping with kids, breakfast literally fuels our day, so packing our camping meals full of lots of energy and nutrients is a high priority for me.  I know that my kids will last longer while hiking on the trail, or paddling down a river if I gave them a healthy camping breakfast to start the day.

No Cook Camping Breakfasts

Just because you’re making a camping breakfast, doesn’t mean that you need to spend a ton of time behind a griddle, or get up extra early to start your family campfire.  These easy kid-friendly camping breakfasts are our go-to when we’re camping with the kids and have a busy day ahead of us.  You’ll love these no-cook camping breakfast ideas that don’t require any cooking.

Yogurt Parfait Bar

This no cook family camping breakfast can be as easy or complicated as you make it.  This is the camping breakfast that I usually grab when we’re in a rush.  It doesn’t take much to make this a little extra special.  

Before we head out, we grab a small container of yogurt in everyone’s favorite flavor.  Top with granola, and then add berries or sliced fruit, and a few fun toppings (coconut and sliced nuts are our favorite for camping parfaits).  

The toppings that we put on our yogurt parfaits, also would work great for an oatmeal bar, so bring all the toppings and get 2 breakfasts out of your prep work.

Bagel and Cream Cheese

This is hands down the easiest no cook camping breakfast out there.  It takes just a minute to prepare and is easy to eat on the go.  My favorite thing about this no cook camping breakfast is that it’s NOT MESSY, so I can easily feed it to my kids in the car if we’re headed for a super early hike or adventure.  To simplify making bagels while camping, we always buy the tub of spreadable cream cheese instead of the packets, since the tub makes it so much easier to store the leftovers.

While it’s tempting to just grab a stack of bagels from the grocery store, splurge a bit and get bagels made in a bakery.  It’s only going to cost a couple dollars more, but the taste is 10 times better.  Bagels are also great for sandwiches on the go at lunch time, since they’re much sturdier than sandwich bread. We’ll almost always choose bagel sandwiches for lunch instead of sandwiches made with bread that smashes too easily.

Boiled Eggs and Fruit

Boiled eggs are the perfect camping breakfast for families to make ahead and eat while camping.  Boiled eggs will stay good for a week if kept cold in the fridge or cooler, so they’re an easy no cook camping breakfast.  Pair them with some fruit (we love these no sugar added fruit cups ) for an easy breakfast while camping.  

Just because you’re camping doesn’t mean you can’t have the easiest breakfast ever.  Cereal is the easiest camping breakfast for groups, so plan on having this on days where you just don’t want to get up early and cook or when you have to feed a crowd.  Since cereal is notorious for lacking in nutrients, add a side of fruit or yogurt, so that your family has plenty of energy for the day.

Easy Hot Camping Breakfasts

Create your own oatmeal bar.

Oatmeal is one of my favorite camping breakfasts since it’s so versatile, and is a hot camping breakfast that you can make super quick.  Ditch the instant oatmeal packets, and instead make a healthier camping oatmeal by cooking your oats from scratch (it’s really just oats and water and a dash of salt – SO EASY).  We prefer Old Fashioned Oats since they have a thicker texture.  Bring a variety of toppings so that everyone can customize their camping oatmeal, just the way they like it.  This is hands down the easiest camping breakfast if you’re feeding a crowd (or a large family, like we have).  As an added bonus, with a camping oatmeal bar, everyone can get their oatmeal just the way they like it, so you’ll hear less complaining about what you made!

Here are some of our favorite camping oats toppings (store these in small Tupperware or plastic bags to easily save them for your next camping meal:

  • Dried or fresh fruit
  • Brown sugar
  • Peanut butter

If you want to pack a bit of protein into your meal, add a scoop of protein powder to the bowl (we always do this on days we’re going to be super active!). This is an easy camping breakfast idea that packs a punch and doesn’t take much time to prep.

Easy Camping Pancakes

Pancakes are my kids’ love language.  The amount of pancakes they can eat would shock you, and I know that if I want to make our camping breakfast extra special, pancakes are the way to their heart.  If you’re going to be making pancakes while camping, this griddle will probably save your life, so grab it in advance.  Cooking pancakes with a frying pan will take significantly longer than on a griddle where you can cook several at a time.

When we go camping with kids, we always use Kodiak Cakes since they’re packed full of protein.  I also love that they’re super easy to make and all you need is to add water to the mix! To add a little something extra to this camping breakfast, top with peanut butter and maple syrup, for extra protein and energy, and make your camping breakfast special with a mound of whipped cream on the top.

If you’re planning to make pancakes while camping, don’t forget the cooking spray and a good pancake turner or you may end up with a disaster on your hands!

Easy Breakfast Skillet Scramble

While my kids love pancakes, my husband is the most happy when we have a more substantial camping breakfast.  I know that if I get up early and make a breakfast scramble, he’s going to be happy for the rest of the day and will usually be willing to help with all the random camp chores I need help with!  

To make your camping scramble extra easy, buy everything pre chopped and all your meats precooked.  Here’s what you need:

  • Potatoes (hash browns)
  • Red or green peppers
  • Meat (bacon, sausage or ham)

Cook your potatoes and peppers in your skillet first until both are soft. Add your eggs for scrambled eggs, and when they’re getting close to finished, add in the meat (it’s precooked so you’re just warming it up).  Top with shredded cheese.

Easy Breakfast Burritos for Camping

Breakfast burritos may sound complicated, but it’s one of our go-to easy camping meal ideas.  You know that breakfast scramble that I just mentioned, it’s also the secret sauce to your camping breakfast burritos.  Cook the exact same meal with scrambled eggs, but put it inside of a tortilla, and add some salsa verde to the inside.  If you like a bit more mexican flavor, add a can of diced green chilis to the skillet as you cook.  Serve with a side of guacamole and sour cream.

No-Mess French Toast Sticks

I love making french toast when we’re camping with kids, and making french toast sticks makes it even easier.  Cut your bread into 4 slices lengthwise, and dip in your egg and milk mixture.  Cook on the griddle until both sides are browned, and then serve.  My kids are so obsessed with getting to dunk their french toast sticks into their toppings.  Since syrup can get super messy for kids to dunk, try giving them some yogurt or whipped cream to dip their camping french toast sticks into.

Peanut Butter and Jelly Sandwiches

While your kids may think of their brown bag school lunches, a PB&J Sandwich is such an easy camping breakfast. Use a whole grain bread and a natural peanut butter to limit the sugar and pack in the nutrients. If you have kids who like to be independent (or you just want to sleep in a little more), this is an easy camping breakfast that kids can make alone.

H itting the road and travelling light, there is nothing like getting back to nature and sleeping under the stars – or at least under canvas or in the comfort of a camper van.

There is more to camp food than noodles and hot dogs. It doesn’t have to mean a diet of burnt sausages and ultra processed food.

It makes more sense to eat healthy, wholefood than packaged processed junk when we are on an adventure in the great outdoors - better for us and better for the planet. Not only is it healthier (and tastier), but there is a lot less plastic, rubbish and food waste.

If you are packing up your tent, or hitting the road in your camper van, I have some easy and healthy ideas that don’t need too much prep, cooking or washing up, but that are packed with flavour and nutrition to make sure you come back from your camping trip feeling well fed and nourished.

Shake up your wake up and eat something different on your next camping trip. Enjoy the time to have a more leisurely breakfast with some of these healthy options:

  • Bircher muesli – this is another name for overnight oats. Before you hit the road, pack a jar with a mixture of oats, and any nuts and seeds you like. Then simply pop a portion into a bowl or jar with a lid, add some grated apple or any of your favourite fruit and cover with milk overnight. The next morning you will have a creamy, tasty and healthy breakfast to enjoy.
  • Eggs are always a favourite breakfast, but to mix things up a bit, how about some French toast with strawberries and Greek yoghurt?
  • Smoky beans.
  • Peaches and cottage cheese on toast – quick, easy, tasty and packed with protein and slow-release carbs to fuel your morning adventures.
  • Greek yoghurt and summer berries with low sugar granola – a no fuss, simple and healthy breakfast.
  • Wraps are always a favourite, but if you are on a mission to eat fewer ultra processed foods, then check the ingredients label. You are looking for as few ingredients as possible. I like Piadina flatbreads – flour, olive oil and salt are the only ingredients in this one.
  • Salad jars – layer up with pasta, rice or couscous, a salad dressing, some shredded, chopped, sliced and diced veggies and top with your favourite protein, or serve with some barbecue leftovers.
  • A picnic lunch of raw veg sticks, falafels, houmous, cheese and pitta pockets, wraps or oatcakes works well.

If you need fuel for hiking and biking, there are plenty of healthy snack options for your outdoor adventure.

  • Trail mix – little packs of nuts, seeds and dried fruit are handy and easy to carry.
  • Nairn’s fruit and seed oat biscuits come in little packs of three - perfect for a snack on the trails.
  • Fruit and seed bars – Nakd and Graze make decent ones, or make a batch of your own favourite flapjack recipe.
  • Fruit is nature’s perfect snack food, of course.

It wouldn’t be a camping trip without a barbecue or two.

Spark up the grill and pile on the veggies. You can grill just about any vegetable. Here are some of my favourites:

  • Sweet potato – wrap in foil and put straight on the coals, or cut into rounds and pop it on the grill.
  • Aubergine and courgette – as soon as they come off the grill, put them into a bowl and mix with a handful of chopped parsley, a squeeze of lemon juice and one clove or raw garlic, grated or finely chopped. Add some salt and pepper and you are good to go.
  • Veggie kebabs with red onion, mushroom, cherry tomatoes, peppers and halloumi.

…and for your protein:

  • For a veggie option, you can’t beat halloumi on the grill.
  • Marinate chicken with lemon, herbs, olive oil and garlic.
  • Steak simply cooked with garlic and seasoning.
  • Fish makes for a healthy barbecue – cook with plenty of herbs and serve with a squeeze of lemon - delicious.

It might be hard to avoid the barbecue during a camping trip, but it doesn't have to involve burned sausages...
