Gosling’s

Gosling’s is one of Bermuda’s oldest and most famous companies. For the best part of two centuries they have been produced one of the world’s finest rums and have had a major impact on the island’s cultural heritage. The story of their rise to success began just over 200 years ago in England and, like many great undertakings, owed much to chance.

At the start of the 19th century, William Gosling was a successful wine and sprit merchant based in London. He wanted to expand his business overseas by setting up a store in Virginia so he chartered a ship and filled it with a cargo of wines and spirits. In the summer of 1806 the Mercury set sail for the US with his eldest son William on board.

After over 90 days at sea, light winds meant the Mercury had failed to reach its final destination. As the charter period had expired the captain headed for Bermuda, the nearest British port, and unceremoniously dumped William and his cargo in St George .

William took a look around the island and noted that there was nobody in the wines and spirits business. On seeing the thirsty sailors of the British Royal Navy, he saw an untapped market waiting to be exploited. At the end of the year he opened a store in St George and stocked it with the cargo from the Mercury.

The business was a success and prompted Williams’s brother, Ambrose Gosling, to head to Bermuda.  In 1824 Ambrose opened a store on Front Street in Hamilton that still stands today. However, it was not until 1863 that they created the product that was to radically transform their fortune.

Rum was an extremely popular drink at the time. In fact, from 1655 all sailors of the Royal Navy were given a daily rum ration (the practice was only abolished in 1970). At the time the rum came from distillers in the Caribbean. The Gosling family spotted another opportunity and seized upon it.

Large quantities of sugarcane are needed to produce rum and Bermuda didn’t have the necessary land. Instead, they decided to import distillates from all over the West Indies and blend and age it themselves. After much experimentation with different blends, they created smooth, black rum that was named ‘Old Rum’, comprising distillates from Trinidad, Jamaica, and Barbados. At there was no bottling plant on the island, it was initially sold on draught only. Customers would take their own containers to the store and would fill them straight from the barrel.

In the years after the First World War, tourists began to flock to the island. To serve the new market Gosling’s needed to bottle their rum. The solution was to use empty champagne bottles, collected from the British officer’s mess, and seal them with black wax. With no labelling customers began to refer to it as ‘Black Seal’ rather than ‘Old Rum’. The name and logo were officially changed in 1950.

Gosling’s Today

Gosling’s today is still wholly owned by the family and is currently managed by the 7th generation. The rum is still blended and bottled on the island and the recipe remains a closely guarded secret, known only to company president Malcolm Gosling and the master blender.

The store on Front Street in Hamilton is still operation and is their main outlet in Bermuda. In 2007 they opened an additional outlet in the city. It specialises in wines and is situated at their old beer warehouse on Dundonald Street.

Gosling’s also operate the Bermuda Duty Free stores in the arrivals and departure areas of LF Wade International Airport .

Unfortunately, the relocation of the major cruise ship berths from St George to Dockyard, led to the closure of their branch in St George in 2008. Their store in Somerset closed in 2011. Until the last day of trading customers could still walk into the Somerset branch and fill their own bottles with rum straight from the barrel.

Visitors should note that any alcohol purchased and taken out of a store in Bermuda cannot be sold at duty free prices. Cruise ship passengers can purchase alcohol at duty free prices from the store in Hamilton but it needs to be delivered to the cruise ship. Gosling’s provides this service free of charge. Airline passengers can buy duty free alcohol on departure (and arrival) at the airport.

In recent years Gosling’s has sought to break out of Bermuda and transform the company into a globally recognised brand. In 2005 Malcolm Gosling moved to Massachusetts to facilitate this and the company now sponsors many major events in the US and elsewhere. They have also launched many high profile advertising campaigns, often light-heartedly referring to family traits and the unavailability of the products. Some of our favourites include:

Product Range

Gosling’s products currently on sale include:

  • Black Seal Rum – The original blend.
  • Gold Bermuda Rum – A rich, golden rum with a smooth taste.
  • Family Reserve Old Rum – The same blend as the original but aged for longer. Each bottle is labelled by hand and individually numbered. It’s a sipping rum best enjoyed with a cigar or chocolate.
  • Rum Swizzle – Pre-mixed cocktail.
  • Dark ‘n Stormy – Ready-made version of the legendary cocktail. Enjoy straight from the can.
  • Stormy Ginger Beer – Canned ginger beer, essential if you want to mix an authentic Dark ‘n Stormy.

Dark ‘n Stormy

Black Seal Rum is the main ingredient in Bermuda’s national drink; the Dark ‘n Stormy. It’s simple to make. Just get a tall glass filled with ice, add 4-5 ounces of ginger beer, top with 1½ ounces of rum, and garnish with a lime (optional).

It’s so named because the dark rum floating above the lighter coloured ginger beer resembles a storm in a glass. It was probably invented up at Royal Naval Dockyard in the early 20th century. At the time Royal Navy personnel based here produced ginger beer to raise funds for their events. At some point in time one of these sailors mixed the ginger beer with their daily rum ration and invented the cocktail.

Rum Swizzle

Another popular cocktail made with Gosling’s products in Bermuda Rum Swizzle . Like the Dark ‘n Stormy it’s served throughout the island, but the most famous place to sample it is undoubtedly the Swizzle Inn.

Gosling’s Black Seal Rum, along with Outerbridge’s Original Sherry Peppers, is traditionally added to Bermuda Fish Chowder to enhance its flavour. The chowder is served at most restaurants in Bermuda.

The rum is also a key ingredient in Bermuda Rum Cake, available in stores island-wide and at the Bermuda Rum Cake Company at Dockyard.

Bermuda Rum Cruises

If you are on the island and want to learn more about Gosling’s and sample some of its products you can take one of the Gosling’s rum cruises. The boat sails around the Great Sound while one of family members hands out samples and gives a talk covering the history of the company, how to make cocktails etc. Cruises depart from Dockyard and the Fairmont Hamilton Princess and can be booked through the Island Tour Centre (Fantasea).

I am interested in more info for this too - we are a group of 11, ranging from 13-70 (in fact, we are going for My Dad's 70th Bday). Is this sunset cruise appropriate for all ages ? (ie: no drunken party boat, LOL)

It was fabulous! The boat was docked right next to the ship. We saw a fabulous sunset. We got great photos. Definitely a party crew on board! Everyone was having a great time and the rum was flowing and strong!

We did the Goslings Sunset Cruise last year with NCL and it was a blast. You catch the boat right at Kings Warf so really easy to get to with little to no confusion.

The crew was a lot of fun and kept the atmosphere light and enjoyable while adding a few facts about how the rum is made.

They bring out sample after sample to try and if it's your birthday you are the proud recipient of a hat and a special glass of rum that you must drink in a certain amount of time or they refill the glass over and over.

The sunset was amazing and it makes for a great Kodak moment or two. They also give you the chance to purchase bottles of rum that you enjoyed during the tasting party. It ended way too soon but as they say - time fly’s when you are having fun! I'm sure you would enjoy it if you are a rum drinker

Rum Journal: From Bermuda, a New Kind of Old Rum 

Bermuda’s Gosling’s Rum has a special place among rum lovers. For years, before rum’s renaissance in the last decade, Gosling’s was often one of the few premium rums you could find a bar shelf. 

For true rum aficionados, its unmistakable flavors, either in a Dark ’n Stormy or neat, conjure up warm memories. 

For several decades, Gosling’s was part of that small phalanx of aged rums, along with expressions like Mount Gay Eclipse, Myer’s and, to some extent, Bacardi 8, that had some degree of shelf ubiquity, particularly in the United States. 

It was back in 2005 that Gosling’s shook up the rum industry with its first-ever Family Reserve Old Rum which, at the time, was one of, if not the top premium rum on the broader market. (Old Rum actually won Rum Journal’s first-ever Rum of the Year in the 2012 Rum Awards , our annual awards that eventually turned into the Caribbean Rum Awards festival and competition). 

The Old Rum, a blend of 16 to 19-year-old distillates, remains a signature premium rum, a reliably excellent sipper famous for its champagne-style bottle — a throwback to the early days of Gosling’s in Bermuda when the rum was sold in old champagne bottles sealed with black wax (hence the famous moniker the “Black Seal.”

For almost two centuries, Gosling’s has exemplified the best tradition of rum blending, aging and bottling. 

Now, the company has done it again, with a new version of its legendary Old Rum. 

It’s called Gosling’s Family Reserve Old Rum Rye Barrel Finish. 

Sealed with a green wax top, this takes the existing Old Rum and finishes it in ex-rye barrels for three years.

So what’s it like?

The rum has an aroma of black pepper, cardamom, brown sugar and chartreuse. 

The flavor profile is marked by malted chocolate, toffee, vanilla, coconut husk, mango and banana, with the slightest whisper of anise. 

The finish is exquisitely smooth and well balanced, with the faintest hint of orange zest. 

The three-year finish is longer than most other cask-finished rums — and it works, imparting a very different, very interesting alternative to the traditional Old Rum. Unlike cask-finished rums from some competitors, this doesn’t taste like a quick addition of rye flavoring — it’s something new, something fascinating. 

Compared to the Old Rum, it’s a bit lighter, a bit more delicate, a different kind of finesse. 

What’s not different? This is also an outstanding rum.

The Dark ‘n Stormy is a signature drink of Bermuda, with many locals naming it the unofficial national beverage. The Dark ‘n Stormy is not the only way that Charleston and Bermuda overlap. In fact, the relationship between the two destinations dates back hundreds of years. When global trade began to boom, voyagers would often stop between the “old” and “new” worlds and make port in Bermuda. Here, they would pick up all sorts of important cargo, namely, rum. 

A modern connection still connects the two: sailing. Charleston Race Week , one of the largest sailing regattas in the US, brings many participants to the Holy City and is one of the biggest events Goslings participates in. With its inception, the Newport to Bermuda race inspired many sailors to stock up on rum in Bermuda that they wouldn’t find in the states. This began Goslings’ first exports, serving sailors since 1906.  Goslings’ rum itself is nearly 200 years old. In 1806, Malcolm’s sixth great grandfather, James Gosling, owned a wine and liquor store in England and was eager to start a business in the new world. So, he gathered 10,000 pounds sterling worth of inventory into a boat called The Mercury and set out on a 90-day journey from England to Virginia . However, his journey was cut short as his boat becalmed at sea. This forced him to take leave at the nearest British port, St. George’s, in Bermuda. Here, just 100 yards from where he arrived, he set up his shop. As his success rose, his brother, Ambrose, joined him with the remaining wine and spirits. This history makes Goslings Rum Bermuda’s oldest business.

5 of the Best Ways to Enjoy Goslings Black Seal Rum

Enjoy our favourite ways to incorporate Goslings Black Seal Rum into your culinary repertoire.

1. Make Swizzle! There is nothing iconic as enjoying rum in a fruity cocktail. Traditionally swizzles are mixed with a Bermuda swizzle stick, made from an allspice bush.

Ingredients: 6 ounces Gosling’s Gold Rum 2-3 ounces Gosling’s Black Seal Rum 1-ounce apricot brandy Juice of 4 limes 1 1/2 ounces Bermuda falernum (or simple syrup) Angostura Bitters to taste Orange slices and maraschino cherries for garnish

Directions: Fill a pitcher a third full with ice cubes. Add all of the above ingredients and churn vigorously with a swizzle stick until a bit of “sea foam” appears on the top. Strain into sour glasses, garnish with a cherry toothpick to a slice of orange.

2. Bake a Traditional Rum Cake Rum was a staple in desserts of yesteryear because of its bold flavour and low cost. The original rum cake recipe was heavy and very similar to that used to create English Christmas or plum pudding. It was adapted to suit the ingredients that were locally available, and baking eventually replaced the standard method of steaming. Because of its delicious blend of flavours, rum cake took on a starring role and became the centrepiece of Christmas and special occasions throughout the year. For many demanding aficionados, though, it was too delicious to reserve for just those times, and it earned its place as a year-round dessert.

Ingredients:

For the Cake 3 cups flour 1 1/2 cups granulated sugar 1/2 cup light brown sugar 2 tsp baking powder 1/2 tsp salt 1 cup butter, softened 2/3 cup milk 1/3 cup Gosling’s Black Seal rum 3 eggs 2 cups chopped pecans

For the Glaze 4 oz. butter 1 cup granulated sugar 1/4 cup water 1/2 cup Gosling’s Black Seal rum

Directions: Preheat oven to 350F.Step 2: Grease and flour a 10″ bundt cake pan. Combine flour, sugar, baking powder and salt in a bowl. Add butter and whisk until butter is worked in completely. The mixture should have a sandy appearance. In another bowl, whisk milk, eggs and rum. Combine dry and wet ingredients until mixture is smooth. Add 1 1/2 cups of pecans to mixture. Add remaining 1/2 cup of pecans to base of pan and pour mixture into pan. Bake 55-60 minutes or until top of cake springs back. When cake has cooled in pan for 10 minutes, make rum glaze. Melt butter. Stir in sugar and water. Boil for 5 minutes, stirring constantly. Remove from heat, stir in rum. Invert cake onto a dish or wire rack with a pan or tray underneath to catch any extra glaze. Poke small holes all over the cake with a fork. This is to make sure the rum glaze can soak into the cake. Spoon glaze all over cake, allowing it to soak in. Repeat until all glaze is used.

3. Create an Easy Glaze An all-purpose rum glaze marries well with oven-baked ribs or chicken thighs. It is always a winning combination and an easy dinner option when served alongside a salad.

Simply blend one cup of Bermuda honey, 1/2 cup each of rum, fresh lemon juice and Worcester sauce and 1/3 cup of fresh minced rosemary leaves and pour over the ribs or chicken parts that have been placed meat side down in a casserole. Bake for 40 minutes at 325 degrees.

A glaze for ham using rum can transform the meat. Simply combine a few tablespoons of brown sugar with a dollop each of Dijon mustard and peach preserves and a dash of your favourite rum in a small saucepan and cook over medium heat for a few minutes. Pour it over the pre-cooked ham and bake until it is warmed through and the glaze has caramelised. Delicious!

4. Liberally Pour into your Fish Chowder Legend has it that Bermuda fish chowder is as old as Bermuda, having become a diet staple of the Sea Venture survivors who unexpectedly landed upon our shores in 1609. Why not whip up your own batch with a classic recipe for Bermuda fish chowder by Yeaton Outerbridge (from April 1991).

Ingredients:  4 quarts water 1 ½ lbs white fish fillets salt, thyme, bay leaves, peppercorns, ground cloves 2 tbsp butter 2 tbsp oil 2 lbs potatoes, peeled and diced 3 large onions, chopped 8 celery stalks, chopped 1 garlic clove, minced 2 green peppers, chopped 6 carrots, diced ½ cup parsley, chopped 1 can (28 oz, 794 g) peeled tomatoes 1 can (10 oz, 285 g) consommé 1 cup ketchup 2 tbsp Worcestershire sauce 2 tsp lemon juice 2 oz Gosling’s Black Seal Rum 4 tbsp Outerbridge’s Original Sherry Peppers Sauce Ground pepper to taste

Directions: In a large pot put water fish fillets, salt, and spices. Bring to a boil and let simmer for 30-45 minutes. In a frying pan melt butter and oil and sauté onions, celery, garlic, and green peppers. Add tomatoes and consommé and simmer for 30 minutes. Transfer this mixture to the fish stock and add remaining ingredients. Simmer partially covered for 2 hours. Adjust seasoning to your liking. Serve piping hot and pass around Outerbridge’s Original Sherry Peppers Sauce and, if you please, Gosling’s Black Seal Rum for dashing.

5. Make a Quick Dessert with Bermuda Bananas A simple recipe of cooked bananas with brown sugar and rum has long been prepared in Caribbean and Central and South American kitchens. In Bermuda, bananas have been enjoyed in this style, either baked in the oven or cooked on the stovetop, for myriad generations.

Ingredients: 4 bananas, ripe but firm, peeled and cut lengthwise 2 tbsp. unsalted butter 3 tbsp. dark brown sugar 1/2 cup dark rum, measured Ice cream

Directions: In medium saute pan over medium heat, melt the butter and sugar and whisk until dissolved. Add bananas, cut side down, for about one minute before turning very carefully. Remove pan from heat and pour in the premeasured rum. Return to heat and shake pan to allow rum to ignite. Let alcohol burn off before shaking pan to coat the bananas. Cook another minute until glazed and translucent. Gently place onto dessert plates and top with ice cream before serving.

Wyndham Championship Introduces Gosling's Dark and Stormy Tavern

Gosling’s Rum is the presenting sponsor of the Gosling’s Dark and Stormy Tavern; the fan pavilion is located adjacent to the ninth green at Sedgefield Country Club, and it is open to all patrons with grounds credentials or daily tickets.  With tables and umbrellas, the Dark and Stormy Tavern will be a welcome resting point for fans following the PGA TOUR action on a late summer afternoon in North Carolina. Since arriving in Bermuda more than 200 years ago, the Gosling family and their barrel-aged rums have made their mark on local households, bars, and international markets, with their flagship Goslings Black Seal Rum becoming an iconic symbol of the island.

Black Seal is celebrated around the world for its award-winning flavor, versatility, and value, making it an essential household staple this holiday season — for pouring and for gifting.

Here are six reasons (with a few recipes) to stock up on Goslings Black Seal Rum before the festivities begin.

1. Even Your Lazy Guests Can Work the Bar

At bars around the world, Goslings Black Seal is perhaps known best for its crucial role in the Dark ’n Stormy® cocktail , first created in Bermuda with Black Seal and ginger beer. The company famously trademarked the Dark ‘n Stormy name, ensuring no matter where the cocktail is ordered, it has Black Seal at its base, delivering the classic and intended taste. To make this especially easy for home bartenders, Goslings also produces Stormy Ginger Beer , which balances spice and sweetness in a perfect ratio. When entertaining this season, put a bottle, some cans, and a bowl of lime wedges out and let guests pour their own — or simply serve some chilled ready-to-drink Dark ‘n Stormy cans .

2. Upgrade your Rum Punch Game

Another cocktail with strong ties to Goslings lore is the Rum Swizzle, a Bermudian favorite that is a delicious swap for that tired rum punch you make every year. While there are no hard-and-fast rules, a Rum Swizzle is usually made by briskly stirring up a couple of rums, in this case Black Seal and Gold Seal , with fresh fruit juices. “Black rums are bold in flavor with notes of molasses and dried fruit,” says Goslings Bermuda Brand Director Andrew Holmes . “Gold or Amber Rums [are] technically dark rums, with delicate spice and hints of vanilla. Combining both black and dark rums allows for a more complex cocktail.” Here, Goslings’ signature swizzle recipe:

Rum Swizzle Serves 4 to 6

INGREDIENTS

4 ounces Goslings Black Seal Rum 4 ounces Goslings Gold Seal Rum 5 ounces pineapple juice 5 ounces orange juice ¾ ounces Grenadine or 2 ounces Bermuda Falernum 6 dashes of Angostura bitters

Fill a pitcher a third of the way with crushed ice. Add all the ingredients and then churn vigorously with a long wooden spoon, until frothy. (Can also mix in a cocktail shaker.) Strain into glasses over crushed ice.

3. Hot Rum Drinks Will Warm Your Outdoor Parties

As we all lean into outdoor entertaining, crossing fingers the weather will hold a little longer this year, many holiday gatherings will take place outside and guests will appreciate concoctions that warm them from the inside out. OG holiday drinks, some of the oldest known rum cocktails, are classics for a reason. Whip up a spiced hot buttered rum or creamy eggnog, served chilled or in the form of a warm Tom and Jerry. Black Seal’s richness will smoothly enhance these recipes as well as other holiday staples like hot toddies, hot, spiked apple cider, or rum punch with cranberry and cinnamon.

Hot Buttered Rum Serves 12

1 750 milliliter bottle Goslings Black Seal Rum 1 stick unsalted butter, softened 2 cups light brown sugar 1 teaspoon ground cinnamon 1 teaspoon grated nutmeg Pinch ground cloves Pinch salt Boiling water

In a mixer, cream together the butter, sugar, cinnamon, nutmeg, cloves, and salt. Refrigerate until almost firm. Spoon about 2 tablespoons of butter mixture into 12 mugs. Pour about 2 ounces Black Seal Rum into each mug (filling about halfway). Top with boiling water (to fill the remaining half), stir well, and serve.

4. Make Old Recipes New Again

Goslings Black Seal Rum has proven that it not only deserves a place on the bar, but in the kitchen, too, where its robust profile can add warmth and intensity to cold-weather and holiday dishes, as with brown sugar-rum glazed ham or rum-lacquered turkey with even a little Goslings stirred into the gravy. Swirl some Goslings into rich Bermuda pumpkin soup with Stilton and chouriço sausage or add a decadent touch to sweet potatoes with a rum-infused glaze.

Black Seal Rum & Maple Sweet Potatoes Serves 6

5 pounds red-skinned sweet potatoes, peeled, cut into ¾-inch chunks 4 tablespoons corn or vegetable oil ¼ cup Goslings Black Seal Rum ½ cup pure maple syrup ½ teaspoon cinnamon Juice of a lime Coarse sea salt and freshly ground black pepper

Preheat oven to 400 degrees F. Combine sweet potatoes and oil in large bowl; toss. Divide sweet potatoes between baking sheets, spreading evenly. Sprinkle generously with salt and pepper. Roast until almost tender, turning occasionally, about 35 minutes depending on size. (Can be prepared 2 hours ahead. Let stand uncovered at room temperature.)

In a heavy-bottomed saucepan combine Goslings Black Seal Rum, maple syrup, lime juice, and cinnamon and bring to a boil, reduce to simmer, and cook for 10 minutes. Drizzle over sweet potatoes, toss to coat. Roast until sweet potatoes are tender and syrup is reduced to glaze, about 10 to 15 minutes. After sweet potatoes are done roasting, pan drippings may need to be further reduced separately to achieve glaze. Serve hot.

5. Give Dessert a Kick

Adding Black Seal Rum, with its warm notes of vanilla, caramel, and fruit, will elevate sweets such as creamy bread pudding or succulent poached pears. Or, as a parting gift, give guests takeaway bags with boozy rum cake or rum balls, like these made with high-proof Black Seal 151 .

Goslings 151 Rum Balls

¼ cup Goslings Black Seal 151 Rum 1 ½ cups vanilla wafer crumbs ¼ cup honey 2 cups ground walnuts Confectioners’ sugar for rolling

Combine all ingredients except sugar. Shape into 1-inch balls. Roll in sugar. Store in a tightly covered container.

6. It’s All About Family

The Dark and Stormy cocktail was not born from the windy blackness of London, nor was it created in a barroom catering to the alcoholic needs of woebegone writers. In fact, it has nothing to do with bad literary tropes and gothic language. The Dark and Stormy is a drink that came to be in the Caribbean waters, where rum is plentiful and so are sailors. It’s a drink that was spit out by the sea, more or less. It’s a drink with a really cool name.

To make a Dark and Stormy—it has just three ingredients but lots of spice—Gosling’s Black Seal rum is the preferred brand, but really, anything dark and funky will work. Officially speaking, it is frowned upon to liven up your Dark and Stormy with lime juice, but we appreciate a layer of citrus. Just don’t swap in ginger ale for the ginger beer. A Little Background

For all its name’s melodrama, the Dark and Stormy’s history is tame. In 1806, an early Gosling family member sailed from England bound for Virginia. He didn’t make it to America—the sea was too still—so the ship headed for the nearest dock instead, which happened to be in Bermuda. There, he used his family background in spirits to create the recipe for Gosling’s aged black rum. On another part of the island after World War I, British naval officers were brewing up ginger beer to combat sea sickness. They swirled the two together in a cup, a sailor allegedly commented it looked “the color of a cloud only a fool or a dead man would sail under,” and the Dark and Stormy was christened. Many things disappear into the Bermuda Triangle. The Dark and Stormy was one thing to come out of it.

    Cooking. Gosling's Black Seal Rum, along with Outerbridge's Original Sherry Peppers, is traditionally added to Bermuda Fish Chowder to enhance its flavour.     Posted July 15, 2015. We did the Goslings Sunset Cruise last year with NCL and it was a blast. You catch the boat right at Kings Warf so really easy to get to with little to no confusion.
