Located in Stellenbosch, with vineyards adjacent to Vergelegen and Morgenster, Journey’s End is right at the heart of one of the cape’s most exciting terroirs. Our coastal location benefits from cooling winds coming off the Atlantic ocean, helping to create wines with great elegance and natural acidity. Following a belief that ‘Less is More’. Bought and replanted by the Gabb family in 1996, the last ten years have seen the estate grow into one of the most talked about in the region. The wines have won accolades and medals at wine competitions around the world ever since the maiden vintages. Here in the cellar we combine traditional winemaking methods, modern technology and a degree of experimentation to produce dynamic fruit driven wines with great elegance and complexity. The philosophy in both the vineyards and cellar follows a minimum intervention approach to ensure the quality of the fruit shines through. We are 100% committed to producing top quality single vineyard and appellation wines that are intricate, integrated and true to our terroir and the climatic benefits of the region.

Deep opaque, ruby black appearance and still showing youth. The powerful ripe fruit is lush and fleshy on both the nose and palate, with lots of ripe cassis and backed by dark chocolate. Eucalyptus, green peppery herbal spice and underlying mintyness come forth and are backed by some sweet almonds. Voluptuously rich but not over jammy and the mid-acidity brighten the fruit and gives length to the wine.

Filet Mignon with Rich Balsamic Glaze

Cooking Time: 00 hrs 25 mins (approx.) Number of Servings: 2

INGREDIENTS

2 (4 ounce) filet mignon steaks 1/2 teaspoon freshly ground black pepper to taste salt to taste 1/4 cup balsamic vinegar 1/4 cup dry red wine

1. Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste. 2. Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. 3. Reduce heat to medium-low, and add balsamic vinegar and red wine. 4. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over. 5. Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately.

“I don’t know why I keep drinking.” I threw myself onto my therapist’s bright yellow couch on a hot summer day.

“I am sure you had a reason,” my therapist replied.

I remembered looking up at her with disbelief. It was not the response I imagined I would get.

This pivotal moment was the beginning of my journey to understanding the deeper reasons behind alcohol consumption, a journey I now navigate with my clients. Six years have passed since then, and having become a therapist myself, the exchange above has also become one that takes place often between me and my clients.

Every Behavior Serves a Purpose: Perceived Benefits

People who come to me to work on their alcohol consumption often feel perplexed by their own behaviors. They see all the good reasons to drink less, yet for some reason, they just can’t seem to figure out how.

“Is there something wrong with me?” many of them end up asking. My answer to that question is a definitive “No.”

No. There is nothing wrong with you. You drink for a reason.

Here is the thing: behind each of our behaviors, there is a motive. Our behaviors serve purposes. They are driven by perceived benefits. We take a shot before walking up onto the stage for a boost of confidence ; we pour a glass of wine before initiating intimacy to soften the moods; and we reach for that fourth beer because we believe the more we drink, the more fun we will get. Behind each sip we take, there is always something that we hope to get. Recognizing these patterns has led me to explore the initial allure of alcohol and the perceived benefits that often go unnoticed.

The Power of Perception: The Initial Perceived Benefits

As we scratch our heads wondering why someone can’t stop drinking despite all the negative consequences, we often fail to acknowledge the perceived benefits. You see, if drinking was really just “all bad,” very few of us would ever get hooked. The tricky thing about alcohol is that it often starts with benefits—perceived benefits, at least.

Imagine a young man at his first college party, feeling awkward and out of place—until he has his first drink. Suddenly, the edges soften, the room seems friendlier, and he feels like he belongs. Or a teenage girl who is going through her first breakup. As the cold beer pours down her throat, the sadness in her chest slowly dissipates. (That girl was me.)

Our early encounters with alcohol often set the tone for our relationship with it, creating powerful perceptions. According to the expectancy theory, we make choices based on the expected outcome of our actions. After the initial encounters, the young man learned to pop open a beer every time he felt unease at a party, and the teenage girl learned to pour herself a glass whenever sadness arose in her chest.

These early perceptions often overshadow the delayed negative consequences. The immediate perceived benefits reinforce the behavior, making it easy to overlook the hangover the next day, the occasional throw-up by the sidewalk, or the long-term impact on one’s health and well-being. As these early experiences shape our perceptions, they lay the groundwork for new associations that reinforce our drinking habits over time.

Reinforcement and New Associations: How Alcohol's Appeal Grows

As we continue navigating through life, the perceived benefits we have around alcohol slowly multiply. Perhaps you were originally drawn to alcohol by the alleviation of discomfort in social situations. Over time, as you continue to drink during parties and gatherings, your brain starts to associate drinking with having a good time.

Moreover, our observations about others around us continue to add layers of perceived benefits to our understanding of alcohol. According to social learning theory , we learn by observing and imitating others. When we watch a housewife on TV pour herself a glass of “mommy’s juice” by the end of the day, we learn to associate alcohol with relaxation and stress relief. When we see our friend pair a Cabernet Sauvignon with a hearty steak, we learn to see wine as a part of fine dining. The observations create more and more perceived benefits we associate with the liquid in the bottle.

These perceived benefits keep us reaching for a drink even when the negative effects start to pile up. Grappling with dissatisfaction with attempts to cut down, many people become trapped in a sense of self-blame.

Replace Self-Blame With Understanding

Understanding the "why" behind our drinking can make a crucial difference, as shame and guilt often hinder our ability to understand and make changes. When we get caught up in painful questions like “What’s wrong with me,” we become distracted from constructive questions such as “How can I create changes?” Insights and awareness are often the first steps to change.

You had reasons to drink. Understanding those reasons gives room for you to learn how to drink less.

Identity Cabernet Sauvignon 2019

Cabernet Sauvignon

This old-World style red displays rich dark red fruit aromas including blackcurrant, ripe cherries, hints of cassis and subtle dark chocolate spice. These aromas are also experienced on the palate and are accompanied by sweet tobacco and Christmas cake characters. This wine has a well-integrated tannic structure showing elegance and lengthy finish.

Technical Notes

The vineyard is planted on a Southeast-facing slope and the roots burrow deep into well weathered granites soils. The grapes were handpicked at 25° balling early in the morning. The grapes were stored in the cold room overnight. The next day they were hand sorted and gently destemmed before being pumped into stainless steel tanks for fermentation. The grapes underwent a 72-hour cold soak before the temperature was lifted to stimulate fermentation. Open fermenter tanks are filled with whole berries and it allows for a slow extraction of tannins and an intense fruit driven profile. Punch downs are done by hand to ensure delicate tannins in this wine. The fermentation lasted 12 days. After fermentation, extended maceration on the skins is allowed for 2 weeks. Extended maceration allows the components to mesh and achieve greater harmony. Tanks were gently pressed, and the free run wine was racked into 5000 L wooden barrels for 6 months to extract light notes of wood characters. All cultivars were matured separately before being blended, fined, stabilized and bottled.

Edible insects and wine paired at Coonawarra vineyard to celebrate sustainability

While cabernet and steak may be the classic pairing, one winery is hoping customers will instead be willing to try cabernet and crickets.

Patrick of Coonawarra in South Australia's Limestone Coast will soon launch an insect and wine tasting menu as part of the Penola Coonawarra Arts Festival.

Owner Luke Tocaciu said the tasting idea was inspired by celebrating sustainability.

"I really wanted to do something outside of the box," Mr Tocaciu said.

"It's really about challenging some perceptions and just having a bit of fun … just to get people thinking about the future and edible insects."

The business recently became accredited with Sustainable Winegrowing Australia.

"Part of that [accreditation] was the establishment of an eco garden ... planted with native plants to attract beneficial insects to the vineyards," Mr Tocaciu said.

"So it's a good way to tie in what we're doing in the vineyard with a bit of an experience."

Pairing wine and insects

Mr Tocaciu said customers keen to try their new menu could snack on ants, mealworms and crickets paired with both white and red wine varieties.

The tasting menu was put together by both the winery and the supplier of the insects, New South Wales insect protein farm Circle Harvest.

Established by entomologist and food scientist Skye Blackburn, the Sydney-based business has been breeding edible insects since 2007.

"We are familiar with all the different kinds of insects and their flavours so with the profile of the wine that gave us a good idea of what would work well," Ms Blackburn said.

"People will get a completely new experience which is fantastic."

Ms Blackburn was hopeful it would help Australians consider incorporating insect protein into their meals in different ways.

"I've always thought that edible insects are a very gourmet kind of food," she said.

"They are very nutrient dense and very sustainable, so I feel like this is a fantastic opportunity to help educate people."

Changing perceptions

From the options, Mr Tocaciu said his favourite was the crunchy roasted crickets paired with a cabernet sauvignon.

"It's a crunchy flavour, you expect it to sort of be overpowering, but it's actually quite subtle," he said.

Many customers have already tried out the food and wine pairings at the cellar door.

Mr Tocaciu said the menu item people tended to hesitate the most over was the cinnamon-flavoured mealworm.

"We've had some good reactions so far, some people are a bit disgusted, others are pleasantly surprised," he said.

"So it's [been] a mixed bag, it's interesting."

Mr Tocaciu conceded he was unsure how popular the tastings would be at first, but hoped customers would keep an open mind and consider giving it a go.

"People [have been] calling and saying, 'Are you really eating crickets?'" he said.

To which he'd been replying: "Yeah, come and do it! Come and challenge yourself."
